  1. if rice isn't cooked yet, cook white rice according to directions (bring a ratio of 1 cup white rice to 2 cups water to a boil, stir, reduce to simmer or lowest flame of gas stove that won't blow out, put the lid on, cook for 20 minutes, turn off heat and let sit covered for 10 minutes, then fluff with a fork or rice paddle) eggs only take max 15 minutes to make, so just keep that in mind when timing your rice.
  2. preheat oven to 450-degrees.
  3. pour red tomato sauce into 10-inch cast iron pan, and make 4 little "wells" to receive the eggs.
  4. carefully crack 4 eggs into the tomato sauce wells.
  5. sprinkle oregano, salt, paprika, and red pepper flakes over eggs.
  6. carefully place cast iron pan in oven and bake for 12-15 minutes, or until the whites of the eggs are actually white.
  7. remove pan from oven, and serve ladled over hot white rice.
