21 days into 2016, and i’m feeling pretty good! at least one of my resolutions is starting to take shape… i’ve been to the gym in the morning 4 times, which means i’m only 95% uncomfortable getting naked in the locker room instead of 100%. you gotta start somewhere, right? you don’t just start off by strutting around the locker room with the towel on your head instead of your body, you have to work up to that point.
speaking of working up to that point, although i’m not on any diet, i am trying to make “better” decisions for my eating habits. for me i’m either working out and eating healthy, or i’m a couch potato eating pints of ice cream for 4th meal (and melty cheese sammiches for every other meal). so to stay off of that rollercoaster, i’m not restricting anything this time. if i want a burger, i’m going to eat a burger (it just better be on a day that i work out). do i REALLY need that oh-so-tasty café viet instant coffee with sweetened condensed milk? if today’s answer is “yes”, then breakfast better not be a bagel.
i also want to expand my habits to include vegetarian and vegan meals, just because. while we often eat vegetarian (sometimes consciously, sometimes because we’re craving something delicious that happens to be vegetarian), we don’t often eat vegan. my husband has been helping with pop up dinners and chef’s table events for david from whealth, who often makes vegan dishes for his non-vegan events, just because it’s delicious. that’s where i want to be. i want to be awesome at whipping up vegetarian and vegan dishes just because they are delicious and that’s what i crave. i don’t want to have to scramble to put together a meal for a dinner party because i invited someone who’s vegan, i want it to be natural.
“oh i’ve got raw cashews on hand, i’ll just whip up ________.”
“i can just swap _____ for _____ for this almost-vegan _____.”
“no problem, i’ll split the recipe here, toss in meat to one half and ____ for the other.”
….call me crazy, but i just went to the store just to buy 2 packages of raw cashews…. on the day before the first east coast winter storm of the season (standing in line for nothing short of 25 minutes) just because i want to make something vegan. i don’t know what it’s going to be yet, but it’s going to be delicious.
